What is Lavorazione circolare®?

Lavorazione Circolare® is an innovative and thoughtful way of honoring wheat, combining centuries of Italian tradition with modern craftsmanship. In a single, careful process, we select wheat germ and aleurone, the heart of wheat, and draw out its delicate oil to preserve its nutrient-rich fibres and proteins. These are therefore infused to flour, giving birth to Altograno®.

Lavorazione Circolare® is an international patent by Casillo Next Gen Food Srl. It is the result of 3 years of R&D and the engagement of 10 Italian universities.

The patented method was brought to life in Corato, Bari, Puglia where Casillo owns 5 mills in the same site. The Smart Recovery plant closes now the circle, connecting to all the mills.

Careful Selection

At our site in Corato, Puglia, between rollers and sieves the production of flour and semolina begins, where the germ and bran, the heart of the wheat, are removed, as they are easily altered! Then, through a careful process, we select the best: the germ, rich in precious proteins, and the bran, loaded with soluble fibres, necessary for extraordinary nutrition.

Smart Recovery

From these fractions we obtain the oil, responsible for rancidity, and recover the essential protein and fiber for a healthy, balanced product. The oil becomes an innovative product in the world of food and vegetable fats. Rich in polyunsaturated fatty acids (the good kind!) and plant sterols, it is suitable for those looking for good fats in a healthy, balanced diet.
